Quinoa, Kale, and Sweet Potato Salad
1 1/2 Cups dry red quinoa
2 medium size sweet potatoes
1 cup dried cranberries
1/2 of a red onion diced
3 cups of washed kale (any kind is fine)
4 tablespoons balsamic vinegar
1 tablespoon of olive oil
1/2 teaspoon of cinnamon
1 teaspoon of honey
1 teaspoon of pink Himalayan salt
1 teaspoon of course black pepper
*toasted slivered almonds optional
