Pizza Caramel

I'm thinking that I should change my blogs name to "Lindsay's Brown Rice Tortilla Pizzeria."  
Sorry, I can't help myself!  It is so.... satisfying!  I feel like I'm really getting away with something ; )

Pizza Caramel Ingredients
(serves two people- or 5 as an appetizer)

Remember to go organic on these ingredients if you can!  If its too much to ask, at least purchase the apple, cheese and rosemary organic. 

2 brown rice tortillas
1 can white beans
1 lemon
1 yellow onion
2 green ginger apples
Olive Oil
Sea Salt
Pepper
6 Swiss Cheese Slices
Rosemary (fresh)

How To:
Preheat oven to 450 degrees

Thinly slice the yellow onion and apples
In a pan, eat about 1 tablespoon of olive oil.  Add slice onion and cook on med-high heat.
Add 1/2 tablespoon olive oil and then add apple slices. (sprinkle a little sea salt to maximize cooking).


Meanwhile, in a mixing bowl, rinse and drain white beans.  Mash them (or place in a food processor).  To assist with mashing the beans, add 3 tablespoons of water, and 1 table spoon of fresh squeezed lemon juice.  Once mashed, add sea salt to taste and mix again.
On a baking sheet, place a long sheet of foil.  Place the tortillas on the foil.  
Spread the white bean puree over both tortillas (it will act as a sauce).  Spread an equal amount on each.
Once caramelized, add apple and onion toppings evenly over the pizza.  Then, place the swiss cheese over the toppings.

Lastly, sprinkle some fresh ground pepper and rinsed rosemary.  Place in the oven for approx. 6 minutes.
Slice n' serve!
