Gluten Free Coconut French Toast

This morning my sweet tooth was in full effect.  I had a nice new loaf of Udi's gluten free bread and decided, what the heck... let's make some french toast!


 Coconut French Toast (Gluten Free!!)
Serves 2

6 slices of Udi's Gluten Free Bread 
1 cup of light coconut milk (I used the canned coconut milk from Trader Joes)
1 Egg (Vegan option: @ mashed bananas, 1/2 cup egg replacer, or applesauce)
1 teaspoon Cinnamon
1 teaspoon Vanilla Extract
1 tablespoon of coconut flakes
Maple Syrup, slice banana, and Earth balance butter for serving

Directions

First, you will want to mix together all the wet ingredients along with the cinnamon, vanilla extract, and coconut flakes.
Next, began to heat up a large pan on medium-low heat.
Spray a small amount of canola oil to prevent sticking.
Then you will dip individually each slice of bread in the mixture.  Make sure the bread is in there long enough to soak up the ingredients.
Shake off any mixture dripping from the bread and then place in the pan to heat.
Each piece will be about 3 minutes on each side.

Serve it up with some maple syrup and earth balance butter and enjoy!
