Black Bean Burger Patties

Happy Thursday Everyone!  Who's ready for a burger?
I was thinking about having a turkey burger for lunch today and came to find that they were two days past their expiration.  Who comes up with those dates anyway?  And of course I am THAT person that listens and obeys. 

So after tossing out the turkey, I decided to get creative and make some healthy black bean burgers instead.  Bun-less or not, these things are packed with protein and nutrients and I highly recommend you make these!


Black Bean Burgers

2 cans of organic black beans
1/2 yellow onion minced
1/4 cup ground flaxseed
1 tablespoon gluten free all purpose flour (this recipe is good without this as well)
1 teaspoon mustard
2 garlic cloves
2 teaspoons black pepper
2 teaspoons chili powder
1 teaspoon sea salt

How To

Drain black beans.
In a blender or food processor toss in all ingredients. 
Blend together until smooth 

Then...

In a non stick pan, use spray olive oil and turn up to medium heat.
Roll out a few spoon fulls of the burger mix into dusted flour.


Cook for about 3 minutes on each side.  Serve with a little melted mozzarella or rice cheese (if your vegan!) and a little sriracha.  I also sauteed a bit of spinach and had some sliced tomato with it.
