breakfast: does a body good

 Oh how I love breakfast.  It wasn't always that way, but when I began my journey into eating better I began craving it.  Still to this day if I don't have a good breakfast (balanced + tasty), it throws off my eating for the rest of the day.  Finding a breakfast that makes you feel great is key.  I say, take note of how you feel 20 minutes after your morning meal.  Which one makes you feel best?  Here are my two favorites:

Banana-Nut Coconut Oatmeal

Ingredients:
1/2 cup cooked steel cut oats or gluten free hot cereal (bob red mills)
1 teaspoon unsweetened shredded coconut
1 tablespoon crushed pecans and almonds
1/2 sliced banana
1 teaspoon raw honey
Sprinkle of cinnamon

Combine together and serve! 

Skinny Breakfast Scramble



Ingredients:

2 eggs (just the whites), 1 whole egg
1/3 cup chopped spinach
1 tablespoon chopped yellow onion
5 thin slices of avocado
1/3 cup grape tomatoes (or about 5 sliced)
Sea Salt & Pepper to taste
Hot Sauce to taste (I like Franks Red hot)

Directions:

Over medium heat, spray your pan with olive oil spray and began cooking onion and spinach.

Whip together all three eggs with a pinch of sea salt.  After about a minute of cooking the veggies, add in egg mixture.

Scramble eggs.

Remove eggs and place on serving plate.  Turn up the stove heat and quick sautee tomatoes with some course black pepper.  Spray a small amount of olive oil over tomatoes.  *Should take one minute.

Serve with sliced avocado and hot sauce over the top. 

And if you want to add one of these in the mix every now and then... I say go for it!  There is something about a fresh squeezed mimosa...
