Chicken, Quinoa and Veggie Sautee


My dinner last night was truly delicious.  I had a bunch of kale that was starting to wilt and some leftover grilled chicken, so I thought... let's make a saute!  I try to do my best to not each starches at nighttime, only because I feel best that way.  However, quinoa, being a complete protein, and sweet potatoes, are my only exception!

Chicken + Quinoa Veggie Saute 
 (serves 2)

1 bundle of Dino kale (washed and de-stemmed)
1 cup cooked quinoa
2/3 cup shredded chicken (cooked)
2/3 cup mushrooms (rinsed)
2/3 cup chopped asparagus (cooked) 
1 cup steamed broccoli

1 tablespoon coconut oil
1 teaspoon raw honey
1/2 squeeze of a lime
1-2 teaspoons Braggs Liquid Aminos
1/2 teaspoon garlic powder
sea salt and pepper to taste.

Directions

Chop all veggies stir fry style.  Kale can be sliced into ribbons.
Over medium heat, place coconut oil in stove top frying pan.  Add in mushrooms and kale.  
Let that cook for a minute or two together.  
Add in all other veggies, chicken, and quinoa.
Then add honey, lime, braggs sauce, and garlic powder. 
Sea salt and pepper the saute to your liking.  

Lastly, try and eat it in an unconventional way.   Mine was sunset style on the porch. ; )
