Coconut Shrimp & Grapefruit Wraps

I use collard green wraps quite frequently and stuff them with yummies, just like a regular sandwich wrap.  This time around, in honor of summer, I put together some summer foods to get your taste buds drooling for more.  Now pack a lunch, grab a beach towel, and enjoy these wraps under the sun.


Coconut Shrimp & Grapefruit Wraps
(makes enough for two wraps)

Ingredients:


8-10 pieces of cooked shrimp
2 large collard green
1/2 a grapefruit cut into small pieces
1/2 red bell pepper chopped
1/2 red onion chopped
1-2 tablespoons of unsweetened coconut shavings
2 tablespoons of chopped fresh mint
1/2 lime
Sea Salt
Garlic Powder
Squeeze of honey

Directions:


In a mixing bowl place all ingredients except the seasonings and the collard greens.

Mix the ingredients together and add in 1/2 of the lime juice, a pinch or two of sea salt, a dash of garlic powder, and a small squeeze of honey.

Mix together again until all the ingredients are coated equally.

Spoon out mixture into a wash collard green and fold like a burrito!
