Turkey Stuffed Portobello Mushrooms

Happy Saturday everyone!  It has been a busy week for me and I am so excited to have the next two days off.  Having busy weeks always make it challenging to eat well.  It always seems tough to prep your food and cook at home when you have so little time to do so.  Despite how hectic things were, I decided to cook up some ground turkey.  For one person it made quite a bit, so I used that turkey meat for salads at lunch and then the rest for this delicious recipe below.  This is one of the most satisfying dinners that I have had in a long time!


Turkey Stuffed Portobello Mushrooms

Ingredients

1 1/2 C. uncooked turkey meat
2 large portobello mushrooms (insides scooped out)
2 tablespoons of cheese of choice (i actually used almond cheese, mozzarella flavor)
1/3 of a yellow onion chopped
1 C. frozen spinach or 3 C. fresh
About 5 cherry tomatoes sliced
1 teaspoon garlic powder
1 teaspoon sea salt
1 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon oregano

Directions

In a large stove top pan, lightly coat pan with olive oil spray.
Place turkey meat in pan and cook over medium heat.
Add salt and cook for 2 minutes.
Add in chopped onion and spinach.
Begin to crumble the turkey mixture with a fork.
Add in garlic powder, chili powder, pepper, and oregano.
Cook for about 5 more minutes or until there is no pink in the meat.

Meanwhile, preheat oven to 425 degrees (a toaster oven will work as well for this).

On a piece of tin foil, place the two mushrooms cap down. 
Place the turkey mixture into the mushroom to stuff it.
Place diced cherry tomatoes and cheese on top. 
Cook in the oven for about 15-20 minutes, or until cheese browns.

Eat it like a pizza or use a fork and knife!  Mmmm... I promise you will like it.  It was SO tasty.
