Almond Flour Berry Scones

Ok carb lovers, here is your new best friend!  This recipe is a great way to get your sugar/carb fix without all the yuck.  Remember... portioning and self control.  Just because these are a much healthier option, doesn't mean to eat them in bulk.  ; )

Almond Flour Berry Scones

Ingredients

2 C. of Almond Flour or Almond Meal
1/2 Tsp. Cinnamon
1/4 Tsp. of Sea Salt
1 Tsp. of Baking Soda
1/2 Tsp. of Vanilla Extract
1/4 C. Maple Syrup
1 Whole Egg
1/2 C. Carob Chips (optional)
1 C. Dried Cranberries, Blueberries, or Cherries
1/4 C. Shredded Coconut (unsweetened)
1 Tbs. Chia Seeds

Directions:

Preheat oven to 375 degrees
In a large bowl, mix together all ingredients (always a good idea to mix dry first).
Once mixed, place onto a cutting board in a pie shape.
Cut out scones to the size you would like (I use a pizza cutter).
Place on a baking sheet lined with parchment paper.
Sprinkle the chia seeds on top of each scone lightly.
Cook for about 10-12 minutes or until scones start to brown.

*I made some honey butter to eat with these and it was DELICIOUS!
