Having a rough day? Yeah, me too... And then I made cookies. ; )
Something I have really adapted from this Paleo craze are all of the yummy treats. If you are going to go for a sweet, Paleo recipes offer tasty, low glycemic, and low carb treats that still give you the pick-me-up without a crash.
For the cookies, I like to chop my own chocolate bar.
Paleo Sea Salt & Dark Chocolate Cookies
makes 8-10 cookies
1 C. Almond Meal
1/8 Tsp. Baking Soda
1/4 Tsp. Sea Salt
1 Tsp. Vanilla Extract
2 Tbsp. Agave Nectar (or Honey)
3 Tbsp. Melted Coconut Oil
1 Tbsp. Vanilla Almond Milk
1/2 C. Coarsely Chopped Dark Chocolate (with sea salt is fine too)
Directions
Preheat your oven to 350 Degrees.
Chop up your chocolate bar (to make 1/2 c. took about 1 1/3 of a bar)
Meanwhile, mix together almond meal, baking soda and sea salt.
Then add in agave, coconut oil, almond milk, and vanilla.
Finally, mix in the dark chocolate.
*Because there are not any eggs, try the batter to see if you could add in a pinch more sea salt. You want these to have a sweet and salty taste.
Line a baking sheet with parchment paper and scoop out about a tablespoon of batter for each cookie.
Bake for 10 minutes and then let them cool down before you eat them (I know, self control isn't always easy). ; )
Eat some. Share Some (if you are really nice). I like to keep some of them in the freezer so when I am looking for a sweet, they are easy to take out, thaw, and eat.
