Dairy Free Chocolate Coconut Pudding

I'm on an avocado high.  Since cutting dairy out of my diet I have been going through avocados like I own an orchad.  What doesn't taste better with avocado anyway? Hmm, yep, can't think of anything.































So, I will now reveal that this chocolate pudding recipe does in fact contain avocado.  I know this may sound a bit strange, but wait until you try it.  You really won't be able to tell a difference, which is why this is a great recipe for kids-or grown up kids, like myself.

The key to eating sweets are to always aim for au natural.  Depriving yourself of sweets should be a thing of the past.  Whats important are the ingredients you use to put a dessert together.

Here are my sweeteners of choice:

Raw honey
Maple Syrup 
Coconut Sugar
Stevia
Xylitol 

I saw a rendition of this recipe not too long ago on the Delighted Momma blog and thought- I need to make this!  So, here you go... have at it!

Dairy Free Chocolate Coconut Pudding
1-2 servings

1 ripe avocado
1/4 c. unsweetend cocoa powder 
1 tsp vanilla
3 tablespoons raw honey
1/4 c. coconut milk

Blend together all ingredients in a food processor and refrigerate for 30 minutes. 

Add shredded coconut and crushed walnuts for the topping.

Remember to savor each bite! Take time with your food and enjoy the experience.
