Sea Salt Chocolate Chip Cookie Dough (Almost Raw!)

Winding down from my birthday (what felt like a "week") has actually been pretty enjoyable. I allowed myself to do absolutely nothing yesterday after work... no chores, no work- just relax. It was pretty exceptional, I must say. I poured a glass of wine, took a bath, watched a few documentaries, reorganized my whole kitchen (i know! but it is enjoyable for me to do it), and I made these tasty guys...

Yep, cookie dough... without all the crap and calories!





Let the drooling begin.

Here's the deal: you can make and shape these however you'd like- bars, balls, unicorns, palm trees...

The trick is to quick freeze them (but not too long). And because I don't want you eating the batch, you can store them in the freezer afterwards in a plastic bag and every time you want to eat one, just make sure to let them sit out for a minute before you do.

Almost Raw Sea Salt Chocolate Chip Cookie Dough

3/4 c. oats, ground into flour
2 tbs. creamy peanut butter or raw almond butter if you'd like
1/4 c. almond milk
3 tbs. honey or maple syrup
1 t. vanilla
14 drops liquid stevia
1/4 c. coconut oil, melted
1/4 c. sea salt 
¼ t. cinnamon
2-3 tbs. chopped dark chocolate chips or carob chips

Directions

Mix all ingredients, folding in the coconut oil and chocolate chips last

Pour into a small 7 x 5 dish (I used a pyrex container)

If making them into cookie dough balls: freeze for about 10 minutes, shape them, and place back in freezer for another 10.

For bars, you will want to freeze them for about 15 minutes and then cut into them.

You can also make a pumpkin spice protein shake (add in extra crushed ice to thicken) and crumble the cookie dough on top.
