Cranberry, Coconut + Chocolate Chip Almond Flour Cookies

'Tis the season to eat a lot of cookies! Okay, not too many. But seriously, go for it! Don't deprive yourself of the treats that go along with the season, just make sure to be mindful! I always try and make my own healthy cookies to keep around the house or office and to give to friends. This way, when someone brings in the crisco loaded cookie with 28 grams of sugar, I can pass it up like a champ.

Let's make some cleaner cookies this time. We don't want those crappy post dessert effects anyway.

Here we go! One for you, one for your friend, and of course... one for Santa.


Cranberry, Coconut + Chocolate Chip Almond Flour Cookies

Ingredients

1 1/4 cups almond meal
1/4 cup chopped dark chocolate
1/3 cup dried cran
1/2 cup shredded unsweetened coconut
1/2 tsp baking powder
1/4 teaspoon sea salt
1/3 cup brown sugar (or 1/2 cup coconut sugar)
1 egg
3 Tbsp coconut oil, melted
1/2 tsp vanilla extract

Directions

In a large mixing bowl, stir together almond meal, dark chocolate chips, cranberries, coconut, baking powder, salt and sugar.

In a separate mixing bowl whisk together egg, coconut oil and vanilla, then add to dry ingredients and mix until just combined.

Chill in the fridge for at least 30 minutes or even overnight.

Preheat oven to 375 degrees.

Shape dough into 1-inch balls, place on baking sheet with 1-1/2 inch space in between each. Press down slightly to flatten a bit.

Bake until edges begin to brown, 8-12 minutes. Cool and serve!
