Sweet + Spicy Ahi Salad

Spring has officially sprung in the Pacific Northwest and my taste buds have been craving some cooler foods. I'm talking fruits, raw veggies, and fish galore! And if you love fish as much as I do, you are in luck. I have the tastiest and easiest way to cook your favorite fish. Mine just so happens to be ahi, so let's make some!

Just make sure to air out the house : )

Sweet + Spicy Ahi Salad 

*no specific measurements for this... all based off of how many are eating

Salad ideas:

Mixed greens
Green onion
Chopped red bell pepper
Trader Joes Brocoli slaw mix
Avocado

Spicy Broiled Ahi Steaks

Ingredients:
Fresh ahi steaks (as many as you are cooking for)
Olive oil (or coconut oil)

Seasonings to taste:

Sea salt
Ground pepper
Garlic powder
Cayenne pepper

Directions:

Set oven on high broil. 
Place ahi steaks directly on a baking sheet or parchment paper. 
Lightly drizzle olive oil over each side of the steak.

On the top of the ahi, sprinkle sea salt, garlic powder, ground pepper (lots n' lots), and cayenne pepper (be a little less generous with this one). 

When your oven is ready, place the ahi in the oven for about 6 minutes then take them out of the oven to cool down for a minute. Yep, that's all!

Honey Sesame Dressing
serves 2

3 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 teaspoon sesame oil
2 grinds of pepper

Directions:

Whisk together all ingredients. Warm dressing in saucepan before drizzling over salad! 

Assemble your salad, toss in the dressing, add some fresh ground pepper and place your ahi steak right on top. Voila! This goes great with a glass of white wine. : )
