Let me tell you what is wrong with the typical Cobb Salad. First of all, the dressing. If you are watching your figure and your overall health, I always advise people to STAY AWAY from creamy dressings. So, not only is the dressing not figure friendly, but it has avocado, bacon, egg and blue cheese too. Maybe alone those aren't all too bad, but when you pack each one into ONE salad... yikes! Thats a lot of fat and a whole lot of calories!
Anyway, I managed to create an equally amazing version of this popular salad and I assure you that you wont be let down.
Lets first make our own dressing! You can find my favorite dressing recipe here.
Healthy Cobb Salad
(serves 4)
2 Heads of Organic Romaine Lettuce- chopped
1 1/2 cups thinly chopped red cabbage
1 cup chopped roma tomato
3/4 cup crumbled Salem Blue Cheese (mix of goats cheese/blue cheese)
8 pieces of grilled turkey bacon
Cook turkey bacon in a stove top pan. Once cooked, fold all eight slices and chop ribbon like.
Meanwhile, mix all veggie and cheese ingredients in a mixing bowl.
Add in turkey bacon.
Pepper salad generously and add in dressing at the end.
