Crunchy Kale Salad

This past weekend was full of tasty food, good drinks, and great company.  Barbecuing has to be one of my favorite things to do.  And for me, I always enjoy some grilled meat or fish paired with a healthy and tasty summer salad (leaves more room for a cocktail... and maybe a s'more...).

I love adding quinoa, almonds, and chickpeas in almost any salad.  They always add a nice crunch and add great flavor.  They are also great ingredients for anyone that is vegan or vegetarian, as they are all higher in protein. 

Try this salad!  I'm sure you will love it as much as I do...


Crunchy Kale Salad
serves 5
Ingredients
(for the salad)

1 large bundle Dino Kale
1/2 red cabbage
1 cup cooked quinoa
1/2 red onion, chopped
1/3 cup slivered almonds
1 8oz can chickpeas

Directions
Wash, chop, and assemble salad.  Mix together with dressing from the link above.
