Simple Caprese

Let's indulge a little bit...

The combination of flavors in this dish make me weak in the knees. In Italian they call this Insalata Caprese, which is simply, caprese salad.  While I'm not a regular cheese indulger,  I like to go for it when I do (full fat, no messin' around).  This is a meal to enjoy and going low-fat, part-skim on the mozzarella in my opinion, really kills your taste buds.

Key ingredients:  Fresh basil, organic beefsteak tomatoes, fresh mozzarella, olive oil, sea salt, and pepper.  

In true Italian form, you don't drizzle balsamic over it.  However, I like the added flavor. So, why not?

Nutrition Tip:  When enjoying food like this, share it!  Have a few bites, enjoy the flavor, and pair with a nice glass of wine. If I'm nibbling on this, I will typically make sure to have some protein with it too.  Think turkey wrapped grilled asparagus or some grilled shrimp skewers.  

It's all a game of balance, right? 

As they say in Italy... ciĆ² che si mangia con gusto non fa mai male!  "What you eat with pleasure can never make you feel ill."
