Bourbon Vanilla Cookie Dough Truffles (Paleo)

Who doesn't love a tasty Valentine's Day treat?

I love those around me far too much to give them crappy, high fructose corn syrup filled sweets. These are super simple, extremely tasty and easy as can be to make.

Skip the box of chocolates this year and give your loved one a healthy, homemade treat.. made with love!






Bourbon Vanilla Cookie Dough Truffles (Paleo)

For the truffles:
1/2 cup coconut flour
1/2 cup almond flour
1 cup creamy or crunchy almond butter
2 tsp coconut oil, melted
2 tbsp raw honey or maple syrup
1 tsp cinnamon
2 tsp bourbon vanilla (you can find this at trader joes!)
1/2 cup dark chocolate chips

For the chocolate coating:
1/2 cup dark chocolate chips
1 tbsp coconut oil
1 tsp sea salt

Directions:

Combine all truffle ingredients in a mixing bowl.

Roll into bite sized balls and set on a baking sheet lined with wax paper.

Place in freezer and allow to harden (about 20 minutes).

Meanwhile, right before you take them out of the freezer begin making the chocolate coating by melting chocolate and coconut oil in a small saucepan on low heat and stir frequently.

Once melted, take chocolate off heat and use a toothpick to dip the truffles, covering them completely or doing a fun, fancy drizzle if you will... ; )

Place truffles back on the wax paper and allow chocolate to harden in the freezer! Before consuming always let them sit out for a few minutes!
