This is a great breakfast or post-workout option and it will leave satisfied without that awful blood sugar spike. And it tastes. so. good.
I paired this with a veggie frittata, fresh fruit, a few mimosa's and voila- you have Sunday brunch with friends.
Banana Chocolate Chip Protein Bread
3 ripe bananas
1 c. almond meal
1/2 c. coconut flour
1/2 c. vanilla protein powder (I used Sun Warrior...make sure it is sweetened with stevia)
1/4 c. melted coconut oil
2 tbs. raw honey
1/4 c. carob chips or dark chocolate chips
1 tsp. vanilla extract
1/2 tsp. sea salt
1 tsp. baking soda
*for a bit more sweetness you can add an extra tbs of honey
Preheat oven to 350 degrees.
Mash your bananas and then mix together the bananas, eggs, vanilla, honey and coconut oil (for finer bread you can use a food processor)
Add in almond flour, salt and baking soda and mix or pulse a few times.
Pour the batter into a greased loaf pan.
Bake for about 55 minutes.
*Make sure to let it cool for about 15-20 minutes before serving and enjoy!
