Paleo Banana Protein Bread

Let's bake some bread!

This simple paleo style banana bread will knock your socks off.  No, really... I've tried quite a few of these primal breads and some turn out too moist, some too dry and some too sweet. And although I may be slightly partial to my own baking, this one turned out juuuuust right.

This is a great breakfast or post-workout option and it will leave satisfied without that awful blood sugar spike.  And it tastes. so. good.

I paired this with a veggie frittata, fresh fruit, a few mimosa's and voila- you have Sunday brunch with friends.

Banana Chocolate Chip Protein Bread

Ingredients

3 ripe bananas
1 c. almond meal
1/2 c. coconut flour
1/2 c. vanilla protein powder (I used Sun Warrior...make sure it is sweetened with stevia)
1/4 c. melted coconut oil
2 tbs. raw honey
3 Eggs
1/4 c. carob chips or dark chocolate chips
1 tsp. vanilla extract
1/2 tsp. sea salt
1 tsp. baking soda

*for a bit more sweetness you can add an extra tbs of honey


Directions

Preheat oven to 350 degrees.

Mash your bananas and then mix together the bananas, eggs, vanilla, honey and coconut oil (for finer bread you can use a food processor)

Add in almond flour, salt and baking soda and mix or pulse a few times.

Pour the batter into a greased loaf pan.

Bake for about 55 minutes.

*Make sure to let it cool for about 15-20 minutes before serving and enjoy!

  5. How did these turn out? I just tried another recipe with protein powder that turned out HORRIBLY, so I want to find another, but I'm hesitant. Was it chalky at all?

  6. Thanks for the recipe! The instructions need a little help, but we bake a lot so just used common baking methods and winged it. The final product turned out fine. Love the way this bread holds together. It's not very sweet, but the chips make up for the lack of sweetness in the bread. If you make it without the chips, you may want to add a little more honey. Our bread pan is a bit wider than the traditional pan, so it only took 40 minutes to bake.
